Job Vacancy – Authentic Mexican Cuisine Chef
Xochi Restaurant | Addis Ababa, Ethiopia
We are looking for an expert chef in traditional and authentic Mexican cuisine to join our team immediately.
Key Requirements (Mandatory):
- Fluent English or Spanish
- Minimum 5 years of experience in authentic Mexican cuisine (moles, tamales, pozole, chiles en nogada, cochinita pibil, etc.)
- Strong knowledge of pre-Hispanic, colonial, regional (Oaxaca, Yucatán, Puebla, Jalisco), and high-end contemporary Mexican cuisine
- Expert handling of traditional ingredients and techniques (nixtamalized corn, dried chiles, epazote, achiote, metate, comal, fermentation)
- Training from recognized culinary schools or experience in high-level Mexican restaurants
- Historical knowledge of Mexican gastronomy
- International food safety certification (HACCP or equivalent)
- Ability to train and lead a local kitchen team
- Immediate full-time availability
